A registered dietician in New York City, Gena Hamshaw said, “Cauliflower is rich in nutrients, including dietary fiber, vitamin C, vitamin K, vitamin B6, and folate. Plus, cauliflower is relatively low in calories and has high water content.”

A medium-sized head of cauliflower contains 1.6 grams of fat, 29 grams of carbs, and 11 grams of sugar. It is also a good source of sodium, fiber, and protein. These nutrition values make this vegetable an appealing addition to almost any diet.
